Peanut Butter Chocolate Chip Blondies

A bean-based blondie that's healthy enough to enjoy frequently and sweet enough to trick a toddler into loving them.

Ingredients

  • 15 oz can garbanzo beans, low sodium
  • 1/2 cup natural peanut butter
  • 8 medjool dates
  • 3 tbsp hot water
  • 1 tsp almond extract
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp mini chocolate chips (I used Enjoy Life brand)

Instructions

  1. Preheat oven to 350F.

  2. Place all ingredients except mini chocolate chips into a food processor. Process until smooth.

  3. Scoop thick batter into a parchment-lined, 8x8 baking pan. Use a lightly-greased spatula to spread and pat batter into pan.

  4. Sprinkle mini chocolate chips over the top. Bake for about 20 minutes or until a toothpick comes out clean.
