Pumpkin Spice Power Bites

Ingredients

  • 2 cups raw cashews
  • 2 cups old-fashioned rolled oats
  • 1/2 cup medjool dates, pitted
  • 3 tbsp pumpkin puree (not pumpkin pie filling)
  • 2 tbsp 100% maple syrup
  • 2 tsp pumpkin pie spice
  • 1/8 tsp kosher salt

Instructions

  1. Measure all ingredients into a food processor.

  2. Pulse several times. Then, process until mixture easily holds together when pressed between your fingers. Pause to wipe down sides of the bowl as necessary.

  3. Press mixture into a small-serving silicone treat mold (or roll into 1-1 1/2in. balls).

  4. Place the filled silicone mold (or balls) into the freezer for 30 minutes.

  5. Remove from freezer and package as desired. They will stay fresh for several days in a sealed container in the cupboard. Or, I will often keep them in an airtight container in the freezer and pull them out as needed.
