Lemon Chia Pancakes

  • 1 c unsweetened vanilla almond milk
  • 1/4 tsp almond extract
  • 1/4 c lemon juice
  • 1 c whole wheat pastry flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1.5 tbsp sugar
  • 2 tbsp chia seeds


  1. Warm almond milk to room temperature. Add vanilla and lemon juice and set aside.

  2. In a bowl, combine all dry ingredients.

  3. Add wet ingredients to the dry and let sit for about 5 minutes.

  4. Cook pancakes over medium heat.

  5. Enjoy with your favorite toppings!*
