I enjoy healthy eating. I truly do. But that being said, I am also a normal person. I also enjoy more traditional, not-so-healthy-for-you treats like brownies, cake, pie . . . (yes, I have a sweet tooth). But most of the time, I would rather eat something that is a little easier on my system. One of my favorite challenges in the kitchen is coming up with recipes that replace the less healthy, empty-calorie ingredients (i.e. cane sugar, all-purpose flour) with ones that provide more nutritional bang for your buck.
Today’s Peanut Butter Chocolate Chip Blondies recipe is one of these creations. Instead of the standard white flour, white sugar and butter you might traditionally find in this type of treat, I created a base using garbanzo beans (chickpeas), dates and natural peanut butter.
I had three official taste testers help me out with these: my husband, my two year old and my dad. I probably could have gotten away with just using my son, since anything he doesn’t spit out stands as a victory in my book. But, my husband gave his approval before I told him there were beans in it. So, that was valuable input as well. And my dad said that even though they didn’t taste as good as they look, they were actually pretty good for how healthy they were. Haha. I’ll take that. Thanks, Dad 😛
Each bar contains 7g of fiber, 8g of protein and less than 2g of saturated fat! They are also free of any added sugars. All of their sweetness comes from dates.
These would be a great item to bring to a spring or summer barbeque. They also make for a great treat option for kids. I love that my son thinks he’s getting a special treat despite all the good nutrition packed in them!

Peanut Butter Chocolate Chip Blondies
A bean-based blondie that's healthy enough to enjoy frequently and sweet enough to trick a toddler into loving them.
- 15 oz can garbanzo beans, low sodium
- 1/2 cup natural peanut butter
- 8 medjool dates
- 3 tbsp hot water
- 1 tsp almond extract
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3 tbsp mini chocolate chips (I used Enjoy Life brand)
Preheat oven to 350F.
Place all ingredients except mini chocolate chips into a food processor. Process until smooth.
Scoop thick batter into a parchment-lined, 8x8 baking pan. Use a lightly-greased spatula to spread and pat batter into pan.
Sprinkle mini chocolate chips over the top. Bake for about 20 minutes or until a toothpick comes out clean.
