Breakfast is the most important meal of the day. We hear this over and over again in the media, and, as someone who is well educated in nutrition, I can validate this to be true. And what better way to start off the day than with pancakes?
These lemon chia pancakes have become a new favorite in our house. They’re packed with wholesome ingredients that will satisfy your hunger as well as your taste buds. They remind me of lemon poppyseed muffins, but with syrup. Can’t go wrong there, right? I highly recommend topping them with a dollop of plain yogurt and a pinch of lemon zest. Yum, yum, yum!
My family and I are off to Hawaii in the morning for some much needed sunshine and family time! I have finished my Christmas shopping, so I will really be able to relax and enjoy this next week of warmth 🙂
