Lemon Chia Pancakes

Breakfast is the most important meal of the day. We hear this over and over again in the media, and, as someone who is well educated in nutrition, I can validate this to be true. And what better way to start off the day than with pancakes? 

These lemon chia pancakes have become a new favorite in our house. They’re packed with wholesome ingredients that will satisfy your hunger as well as your taste buds. They remind me of lemon poppyseed muffins, but with syrup. Can’t go wrong there, right? I highly recommend topping them with a dollop of plain yogurt and a pinch of lemon zest. Yum, yum, yum!

Lemon Chia Pancakes

Ingredients

  • 1 c unsweetened vanilla almond milk
  • 1/4 tsp almond extract
  • 1/4 c lemon juice
  • 1 c whole wheat pastry flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1.5 tbsp sugar
  • 2 tbsp chia seeds

Instructions

  1. Warm almond milk to room temperature. Add vanilla and lemon juice and set aside.

  2. In a bowl, combine all dry ingredients.

  3. Add wet ingredients to the dry and let sit for about 5 minutes.

  4. Cook pancakes over medium heat.

  5. Enjoy with your favorite toppings!*
