One of the “perks” of pregnancy is the absentmindedness that often messes with you–particularly in the third trimester. Well . . . earlier this week, that absentmindedness got a bit physical. I got out a jar of salsa to have with some blue corn chips (hello, salt craving!). Put it on the counter and got distracted by something, can’t remember what. Anyway, came back to the salsa to give it a good shake before pouring it out only to find myself shaking it–with force–directly into my face. And eyes. And hair. And all over the kitchen. LOL!! Almost sad to think no one was around to witness that one!! My two pups sure didn’t mind being my cleanup crew. I’m just thankful it wasn’t a hot and spicy salsa!!
Speaking of spicy, today’s recipe provides just enough of a kick to wake your senses. I’m a big fan of simple side dishes. They can be very handy for those days where you just don’t feel like slaving away in the kitchen. What is especially awesome is how flavorful this dish is with so few ingredients. I find the sweetness of the peas plays nicely with the mild heat from the chili powder. And the starchy potato serves as a nice base.

Easy Peasy Spicy Potatoes
A simple side dish with lots of flavor.
Ingredients
- 3 cups red potatoes chopped into 1-inch cubes
- 1 cup peas
- 2 garlic cloves
- 1 tbsp olive oil
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1/2 tsp kosher salt
- dash black pepper
Instructions

Preheat oven to 400F.

Combine all ingredients into an 8x8in square baking dish. Toss until well combined.

Bake for 25mins, giving the dish a good stir at halfway.
